When you go to the market or grocery store, you might notice that bell peppers are available in various colors. These colors can tell us about the flavors as well as the nutrients in the peppers. You might also notice a difference in prices based on the color. This is because bell peppers change color as they ripen. Older peppers require more work and time for the farmer to take care of, and thus result in higher prices.
