The canelé is a small, round pastry that looks like a tiny cake. It has also been described as looking like a chef’s hat. The pastry comes from Bordeaux, France, and was first made sometime between the 15th and 18th centuries. Bordeaux is famous for producing wine, and egg whites were commonly used in the wine-making process. One story says that winemakers gave the extra egg yolks to nuns, who used them to make food for those in need.
