Quesadillas have been around since the days of the Aztec Empire in the 16th century. Back then, quesadillas were stuffed with pumpkin and squash, and then baked in clay ovens. The Aztecs must have played an important role in the spread of quesadillas because today, this kind of food can be found in the appetizer section of restaurant menus throughout North America. There is even a National Quesadilla Day, which is held yearly on September 25.
